Abstract Preview

Cassava processing adds value to raw cassava and creates employment. This study analyzed economics of cassava processing in Ondo State, focusing on garri and fufu production. Data were collected from 100 processors using structured questionnaires. Gross margin and profitability analyses were conducted. Results showed that garri processing had average revenue of N450,000 monthly with gross margin of N165,000 (37% margin). Fufu processing had revenue of N280,000 with gross margin of N98,000 (35% margin). Major cost components included raw cassava (55%), labor (25%), and firewood (10%). Constraints included high cassava prices during scarcity, inadequate processing equipment, and limited access to credit. Recommendations include linking processors to cassava farmers and providing equipment financing.
